Simple Greek lamb marinade

Lamb has a unique flavour making it a favourite in Australia. This marinade accentuates the deep lamb flavour by adding a soft texture and fresh vibrant twist when you bite into that roast or cutlet. Prepare this marinade to serve over Brisbane Valley Farm Direct quality lamb! Pro tip: Get up before work, mix the ingredients and leave in the fridge for when you get home. It’s worth it!

  • 350ml olive oil
  • 4 cloves garlic, peeled and minced/grated
  • Zest of 1 lemon
  • ¼ tsp chilli flakes
  • Sprig of fresh rosemary roughly chopped
  • 1 tsp dried wild oregano leaves
  • Flaked sea salt
  • Cracked white pepper


Step 1

Combine all ingredients together and marinate over lamb for a minimum of 2 hours (leave on the bench or in the fridge!).
