Simple Greek lamb marinade
Lamb has a unique flavour making it a favourite in Australia. This marinade accentuates the deep lamb flavour by adding a soft texture and fresh vibrant twist when you bite into that roast or cutlet. - 350ml olive oil
- 4 cloves garlic, peeled and minced/grated
- Zest of 1 lemon
- ¼ tsp chilli flakes
- Sprig of fresh rosemary roughly chopped
- 1 tsp dried wild oregano leaves
- Flaked sea salt
- Cracked white pepper
Combine all ingredients together and marinate over lamb for a minimum of 2 hours (leave on the bench or in the fridge!).
