Beef and Black Bean Quesadillas with Slaw
A quesadilla is a heated tortilla with melted cheese inside. But in addition to cheese, you can put practically anything in a quesadilla. Delicious and terribly unhealthy 🙂 !!!
This meal serves a family of 4.
- 500g Brisbane Valley Farm Direct premium beef mince
- 2 cloves garlic minced
- 1 red onion peeled and finely diced
- 1 corn cob kernals removed
- 200g shredded cheese (a Mexican blend preferable, or a tasty)
- 1/3 bunch coriander chopped
- 4 large wheat tortillas
- 1 can black beans
- 1tsp dried oregano
- 2 tsp smoked paprika
- 2tsp ground cumin
- 500g Slaw
- Chipotle aioli or plain aioli
- 2 x Tab Red wine vinegar
- Salt and pepper
- Chilli flakes (optional)
Mix together mince, garlic, beans. In a saucepan, lightly saute onions and corn in a little oil, when onions are soft add spices and cook for 1 minute. Allow to cool and little and add to beef mixture and mix together. Add seasoning.
To assemble lay 1 tortilla on the bench and sprinkle ¼ of the cheese on to 1 side of the tortilla, sprinkle some chopped coriander on top of the cheese, then press ¼ of the beef mixture on top of that. Flod over the other half to form a ½ moon shape. Repeat with the other 3. Leave at room temp.
Heat a heavy based pan on a medium heat and cook 2 quesadillas at a time. Cook on the first side for approx. 5 minutes until crisp, flip over and cook for approx. 4 minutes.
Place the slaw in a bowl and add red wine vinegar and enough aioli to bind it, season to taste.
To serve, place the cooked Quesadilla on a plate and lay a generous amount of slaw beside it.
